I’ve been making these vanilla protein cookies for a little while and have only just realised that I haven’t posted the recipe yet. The shape, texture and taste remind me of some little cookies that I use to make before being vegan. Cookies that were basically made with butter and sugar.

These have no butter and only a small amount of sugar. And they are gluten free.

They are fairly simple to make and need only 1 bowl.

You could pretty much decide to make them now and be eating them within half an hour!

Instructions
  1. Preheat oven to 180℃.
  2. Line a baking tray with paper.
  3. Add the flour, almond meal, protein powder, salt and sugar in a bowl and mix.
  4. Add rice milk, molasses and coconut oil, then mix until mixture forms a thick dough.
  5. Form into golf-sized balls and put them on the prepared baking tray.
  6. Press each one down with a fork.
  7. Bake in oven for 12 - 14 minutes.
  8. Cookies will be a little soft when taken out of the oven, but will harden as they cool.

  1. Ah! These protein cookies look great! I was always skeptical of the idea…and then I actually tried it, and you’re right. They can be a brilliant replacement to traditional cookies!

    Note. These are NOT nut free – they have almond meal (ground almonds) in them.

    I never thought of adding protein powder to cookies, great idea for vegans especially to get more protein into their diet. Simple recipe and delicious looking cookies! 🙂
