Hummus is a go to snack for me and my family because it can be so fast to whip up in a blender. This sweet potato hummus takes a little longer to prepare but the creaminess and sweetness of the potato gives it another dimension that’s worth going the extra mile for (or waiting an extra hour for).
The idea for the presentation of this came from a conference I went to last year.
If they had a menu and listed hummus with veggie sticks, I would’ve been ‘Meh!’
But these were served in cute little glass jars with the veggie sticks used instead of a spoon to scoop out all the hummus stuck in the bottom of the jar. And suddenly, everyone was singing the praises of the hummus: it was gorgeous, it was cute, it was fab.
It was hummus and veggie sticks.
The key is presentation. Presentation is everything.
Presentation is everything but occasionally I don’t feel like presenting. Especially when it’s just for me.
Sometimes I don’t feel like getting a bowl or a plate out of the cupboard and plating up my food. Here’s a secret that you’d only know if you were a fly on the wall, because I don’t even do this if the family are around. Wait for it. I sometimes stand at the fridge with the door open and just eat straight from the fridge.
No plate, or bowl, or spoon, just me and the fridge and the food. Nothing to stand between us. I mean, it saves me on washing up, or at least rinsing a plate, putting it into the dishwasher and then taking it back out again to put away. That’s time that could be spent doing other things, like surfing the net, or running, or cycling, or swimming at the beach.

Sweet Potato Hummus
- Prep Time: 5 mins
- Cook Time: 60 mins
- Total Time: 1 hour 5 minutes

- 2 cups chickpeas
- 1 lemon (tested and juiced)
- 1 sweet potato
- 1 tsp ground cumin
- 1 pinch cayenne pepper
- 1 tsp sea salt
- ¼ cup olive oil
- 2 cloves garlic
- Place sweet potato in the oven on a baking tray at 180C for 1 hour, or until very soft.
- Allow to cool and remove skin.
- Add all ingredients to a food processor and blend until well combined.
- If it is too dry, add extra oil and/or soy milk.
- Serve with a drizzle of olive oil.
