Potato and Avocado Salad

It’s the time of year when I start thinking about all the different ways to make salad. It’s getting hot outside and I just want salad, but I want it to fill me up and be satisfying. And that’s where avocado comes in. Avocado is one of my most favourite things to have in a salad. We are fortunate in Australia to have avocados all year round because of the different climatic regions. And so today’s salad is brought to you by Australian avocados. I took one of my favourite salads – potato salad – and made it with one of my favourite vegetables – the avocado.

Actually, first things first. Avocados aren’t actually vegetables. Avocado is a fruit! In fact, it’s a berry. And now I love them even more. No more smashed avo on toast, it’s now smashed berry on toast.

This potato and avocado salad uses sweet potato. Blend the dressing in less than 10 minutes toss the potato through and top with shallots and sesame seeds.

 

I chose a recipe from Australian Avocados and changed it to suit what I had in my kitchen. So the potato salad became sweet potato salad with an avocado dressing. The original recipe is here.

This recipe definitely fits my criteria of being easy to make. Chop and steam the sweet potato, I didn’t even peel it, just washed them.

Blend the avocado, lemon juice, mustard and water. Then mix everything together. This is just as good cold as it is hot, so perfect for picnics and BBQs.

Instructions
  1. Wash the potatoes and dice into cubes, leaving the skin on.
  2. Steam the potatoes and allow to cool.
  3. Chop one avocado into cubes and set aside.
  4. Place the other avocado, mustard, parsley, lemon juice and water into a food processor and blend till smooth.
  5. In a mixing bowl add the cooled potatoes, shallots, sesame seeds, chopped avocado and dressing and mix thoroughly until combined.
