Papaya Lime Salad
I’m continuing the summer fruit theme with today’s salad. Sliced papaya mixed with peas, beans and sprouts. The combination of papaya lime and crunchy peas and beans is fresh and crisp and with the taste of summer. This is a great mix of flavours that can leave you thinking of balmy nights in a tropical paradise. Just close your eyes with each bite and I’m sure you can imagine yourself there!
I’m going to say this, but I wouldn’t do it – You could replace the papaya with mango. So why wouldn’t I do it? I don’t like mango! Gasp! I know.
There, I’ve said it. I don’t like mango. Whenever I say that, people tell me I must be crazy, I must be the only one in the world who doesn’t like mango. Apparently everyone loves mango. Except me. I like papaya, in thin slices but not mango. If mango is your thing then add it in slices or cubes to this salad and enjoy it.Print
Papaya and Lime

- 1 papaya (red)
- 125 grams fresh green beans
- 125 grams snow peas
- 1 cup bean sprouts
- 1 punnet cherry tomatoes (sliced in half)
- 4 tablespoons olive oil
- 1 large lime (juiced)
- 1 tablespoon apple cider vinegar
- ½ bunch coriander leaves
- ½ teaspoon sea salt
- ½ cup raw peanuts (crushed)
- Peel and slice the papaya into thin strips.
- Slice the beans and peas diagonally and add to the papaya.
- Add the bean sprouts and the tomatoes.Dressing
- Place olive oil, lime juice, apple cider vinegar, coriander leaves and salt in a food processor. Blend for a couple of minutes until most of the coriander leaves are chopped.
- Pour dressing over salad and toss gently with a fork.
