Nectarine Avocado Salad

What tastes better than peaches and cream? Nectarines and avocado! Okay, so it’s probably not as traditional as peaches and cream and not as sweet but as a salad it’s a fabulous combination.

And just to go with the peaches theme, you could use peaches instead of nectarines. The mix of capers in this salad gives it a salty flavour to counterbalance all that sweetness.

There are some varieties of nectarines that you can slice in half and twist and the flesh comes away from the stone easily, but if you don’t have that variety then slice the nectarines in half from top to bottom. Leave the halves on the stone and slice again around from top to bottom so the cuts are in quarters. Slice again if need be and pry the flesh off the stone. Once you’ve got one section off the stone, cut around the stone to make even slices.

Ingredients

  • 120 grams mixed lettuce
  • 2 nectarines
  • 2 avocadoes
  • ¼ cup capers
  • 2 tbsp orange juice
  • 2 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 1 tbsp maple syrup

Instructions

  1. Place lettuce leaves on a platter.
  2. Slice each nectarine into about 10 pieces. (Some nectarines pull easily away from the stone, others do not. You may have to cut around the stone.)
  3. Slice the avocados in half.
  4. Remove the stone.
  5. Peel the avocados and slice finely.
  6. Arrange the avocados and nectarines over the salad leaves.
  7. Top with capers.
  8. Add the dressing ingredients to a glass jar, shake to combine and pour over salad.
