Mexican Tortilla Salad

The tortillas in this salad may just become your favourite cracker. The Cajun seasoning gives a salty, spicy flavour that can be served without the salad but with dip for when you want a savoury snack.

I used a simple dressing for this salad, just a squeezing of lemon juice and some black paper. That added to the Cajun seasoning gives more than enough flavour to turn this tomato, corn, cucumber and lettuce combo into a Mexican delight, especially with the avocado heaped on top.

This is a basic Mexican salad, just perfect for me as a basic Spanish language learner. I now understand why ‘tortilla’ is pronounced as ‘tor-TEE-ya’.

Instructions
  1. Preheat the oven to 180C.
  2. Cut the tortillas into small squares, about 5cm square.
  3. Mix the avocado oil and Cajun dressing into a bowl.
  4. Toss the tortilla pieces through the oil and spice to ensure they are evenly coated.
  5. Spread out on a baking tray and bake for 15 mins, or until crisp.
  6. Slice the lettuce finely and place into a large bowl.
  7. Slice the cherry tomatoes into quarters and add to the lettuce.
  8. Drain the corn kernels and add to the bowl.
  9. Peel the avocado and remove the stone. Put into a bowl and mash until smooth.
  10. Add the lime juice and stir to combine.
  11. Place onto a serving platter and serve with the tortilla crackers and coriander sprinkled over the top.
