Here we are at the end of the Salad a Day where I have posted a different salad recipe every day for 30 days. As a special bonus and because I can’t get enough of salads here’s a special one. Day 31. Tomato and basil salad.

When I was visiting the Isle of Capri in 2012 I ordered a tomato salad for lunch. The salad in the photo above was the salad I received. A plate of tomatoes, a couple of basil leaves and a sprinkling of pepper on the side. Since then I’ve been on a quest to discover what salad is. And I’ve come to realise that salad can be pretty much anything you want it to be – vegetables or fruit, hot or cold, one ingredient or lots. If you have one of those or a combination then you have salad.

So I thought I’d end the Salad a Day with my version of a tomato salad. And it’s tomato and basil with some olive oil and salt. You can use the same variety of tomatoes like the salad I was served in Italy or a variety, like I did. Either way it’s still a salad.

Instructions
  1. Cut the tomatoes - halves for the cherry tomatoes and slices for the bigger tomatoes - depending on which varieties of tomatoes you have.
  2. Put the tomatoes into a bowl.
  3. Tear the basil into small pieces and add to the bowl with the olive oil.
  4. Toss gently to ensure the tomatoes are evenly covered with the oil and basil.
  5. Spread onto a serving platter.
  6. Sprinkle with salt.
