After a week of lying on the lounge recovering from the flu I was looking for something zesty, something to pick me up, something with some pep. And that something came in the form of zesty lemon cardamom balls.
Balls are the perfect snack. The size is just right – you need more than one bite (because who wants a snack to be over with after just one bite?) But not so many bites that you feel stuffed and guilty after eating it. Balls are just perfect.
Surprisingly, I’m not a huge fan of lemon, but these lemon balls offer something extra. I’m not sure what it is, but the flavour is just spot on. The dates provide a sweetness and the lemon zest gives them a tart flavour that gets you to squint just a little. Cardamom is well known as an aromatic spice, often used in Indian curries and chai but just a little spoonful in this recipe gives these balls a distinctive flavour.
