There's nothing better than making your own homemade tomato sauce from fresh tomatoes. The flavour is intense, the texture is smooth and it's so simple.

Make homemade tomato sauce of course. And if I didn’t have a box of tomatoes I would have gone out and bought a box because this is the best homemade tomato sauce, ever. Don’t be put off by the total cooking time needed for this sauce. It’s around two hours but you only have to spend about 10 minutes in total stirring and processing. The rest of the time the sauce is in the oven doing its thing. Two hours is about the time it takes to change some tomatoes into this incredible homemade tomato sauce.

I didn’t create this recipe. A friend shared it with me and I just had to try it – and not just any friend, but an Italian friend, so that makes this just about perfect. The recipe I was given suggested using 1kg of tomatoes and so the first time that’s exactly what I did, but it wasn’t enough. The sauce was enough for one meal, but I wanted more and so when I saw an 8kg box of tomatoes I did a little happy dance, bought them and went home and created enough sauce for a week. I used it on spaghetti, pasta, rice, pizza, toasted sandwiches, crackers. You name it, anything savoury I had last week I had it with this homemade tomato sauce.

Instructions
  1. Preheat oven to 160C.
  2. Line a large deep baking dish with a sheet of baking paper.
  3. Remove the stalk from the apple, cut into quarters and remove the core.
  4. Peel the onion and cut into quarters.
  5. Cut the tomatoes into quarters.
  6. Place the apple, tomatoes and onion in the baking dish, skin side down.
  7. Peel the garlic cloves and place into the dish.
  8. Lightly drizzle the ingredients with the macadamia oil.
  9. Bake in oven for 40 minutes.
  10. Remove, add about 8 - 10 large basil leaves into the dish and stir gently to coat them in the oil and tomato juice.
  11. Bake again for 40 minutes.
  12. Remove and stir gently again.
  13. Bake again for 40 minutes.
  14. Remove from oven and allow to cool.
  15. Place into a food processor and blend together.
  16. Stir through remaining basil leaves.
  17. Store in an airtight glass jar.
