Module Six of The Vegan Chef and Lifestyle Training, which is part of Veet’s Cuisine, focuses on dietary requirements.

How many times have you been to a restaurant / cafe / event / wedding etc and have had to explain your dietary requirements. Each person’s dietary requirements seem fairly simple but when you’re catering for different requirements it requires a lot of thought and options to ensure everyone is catered for.

As a chef, I would want everyone to feel comfortable with explaining what they require and what I can provide, all the while ensuring  the food I use is cruelty free and not using any animal products.

Over Module 6, we learnt about and planned and cooked for nut-free, diabetes, low FODMAP, gluten free, Coeliac disease, PKU, Hashimotos, Diverticulitis and other specialised diets and allergies.

We created a menu, shopped for that at Mullumbimby markets and then just as we were about to prepare our meals, we were given some dietary requirements of the four people we were serving.

This required us to get creative with what we had in the kitchen and to ensure those people we were feeding had an abundance of food, just like those that had not specific dietary requirements.

Black Bean Brownie

This brownie was my favourite … because I definitely have a sweet tooth. I’ve made brownies before, which you can find here, but this is the first time I’ve used beans in a brownie recipe. And it was a-maze-ing!
